Planning a holiday appetizer, but don’t want to put out the same artichoke dip you find at every party? Peg Rasmussen, owner of Countryside Catering, suggests spicy bacon-wrapped potatoes, one of the most popular items on their menu.
For ingredients, you’ll need Yukon Gold potatoes, sweet chili seasoning, brown sugar and apple-smoked bacon. For a side of lime crème, you’ll need sour cream, lime juice and more brown sugar.
Start by steaming the potatoes until they’re soft enough to pierce with a fork. Slice into wedges, dust with sweet chili seasoning and brown sugar, wrap them in bacon, and skewer with toothpicks. Roast in oven at 350 degrees F. until bacon is crisp.
While the potatoes are in the oven, prepare the lime crème to serve on the side or drizzled over the potatoes. Mix 1 cup sour cream and 1 Tbsp. lime juice until it has a strong lime flavor. Mix with brown sugar 1 tsp. at a time to even out the flavor as desired.
