Italian Tortellini Salad Recipe

Try this wholesome, Mediterranean-inspired pasta salad that’s perfect light summer fare.

Italian Tortellini Salad
Yield: Four 1 cup servings

8 oz. refrigerated cheese tortellini

½ cup cherry tomatoes, cut in half

½ cup green bell pepper, chopped

½ cup black olives, sliced

¼ cup parmesan cheese

¼ cup mozzarella cheese

¾ cup Italian dressing

Cook tortellini according to package directions. Chill in refrigerator for 1
hour or overnight. Combine all ingredients together in a medium bowl, and toss
gently.
